| Penerangan CU | The main purpose of Post – Mortem Meat Inspection is to further inspect the condition and cleanliness of head, major lymph nodes, tongue, external and internal masticatory (ruminant) muscles, external and internal carcass, and internal organ and to segregate and dispose the condemnation parts The person who is competence in this work shall be able to determine further inspection requirement, prepare tools and equipment, carry out head (ruminant and pig) inspection, carry out carcass (ruminant and pig) inspection, carry out viscera / offal (ruminant and pig) inspection, carry out poultry post – mortem inspection, mark Inspection Legend Stamping for ruminant and pig, monitor condemned carcass and organ disposal procedure, report and record post – mortem meat inspection The outcome of this competency is to ensure that thorough inspections are done according to Meat Inspection Rules where workers are properly attired according to OSHA and GMP MS 1514:2001 requirements. All procedures and reports followed in compliance with Department of Veterinary Services (DVS) Requirements. |

| Objektif Pembelajaran | The person who is competent in this competency unit shall be able to ensure that thorough inspections are done according to Meat Inspection Rules where workers are properly attired according to OSHA and GMP MS 1514:2001 requirements. All procedures and reports followed in compliance with Department of Veterinary Services (DVS) Requirements. Upon completion of this competency unit, trainees will be able to:- • Determine further inspection requirement • Prepare tools and equipment • Carry out head inspection (ruminant and pig) • Carry out carcass inspection (ruminant and pig) • Carry out viscera / offal inspection (ruminant and pig) • Carry out poultry post – mortem inspection • Carry out carcass identification • Monitor condemned carcass and organ disposal procedure • Generate post mortem inspection report |
