Penerangan CUThe CU describes competency of couverture and compound chocolate block production as a process of blending identified ingredients using a batch system of chocolate production machineries to produce high quality couverture and compound chocolate blocks.

The competent individual in this CU shall be able to identify types of couverture / compound chocolate block, mixing the ingredients, refining the dough, conching the refined mixture, tempering and molding the liquid mixture, cooling, demoulding, and packing until storage.

The outcome of this competency is to enable a good quality couverture and compound chocolate block (the main component in chocolate and compound production) making expertise is acquired.

Objektif PembelajaranThe person who is competent in this CU shall be able to produce high quality of chocolate block to fill full the customer requirements. Upon completion of this competency unit trainees will be able to :-
• Identify various ingredients for chocolate and compound block production and it’s blending processes;
• Identify production machineries for batch system to produce high quality chocolate and compound blocks.
• Identify types of chocolate and compound, mixing the ingredients, refining the dough, conching the refined mixture, tempering and molding the liquid mixture, cooling, demoulding and packing.
• Handle and troubleshoot manual and automatic production machineries
• Handle and manage products packing and storing
