Penerangan CU | The CU describes a process of coating layer by layer preparedcentre using liquid couverture / compound chocolate block to uniformly coat with required thickness. The person who is competent this CU shall be able to prepare equipment and room condition, identifying the centre, preparing the pre-coating agent for centre, identifying couverture / compound chocolate block for coating, perform gum Arabic coating, perform chocolate shellac (coating with chocolate shiner) The outcome of this competency is to produce hygiene panned couverture / compound chocolate block in consistent form with attractive appearance and long shelf life. |

Objektif Pembelajaran | The person who is competent in this CU shall be able to produce high quality of chocolate artistry product to fill full customer requirements. Upon completion of this competency unit trainees will be able to:- • Perform chocolate ornaments • Perform chocolate decorations on finished product • Perform Hollow Figure Moulding Technique • Perform chocolate Carving and Modelling. |
